1 3/4 cups unbleached flour 3/4 cup granulated sugar 1/2 tsp baking powder 1/4 tsp baking soda 1/2 tsp salt 1/4 tsp cinnamon 1/2 cup applesauce -- at room temperature 2 egg whites -- whipped 1/2 cup fat-free sour cream 1 tsp vanilla 1 cup strawberries -- chopped
Preheat oven at 350. Prepare a loaf pan with cooking spray and flour.
In a mixing bowl, combine flour, sugar, baking powder, baking soda, salt, and cinnamon. In another mixing bowl, combine applesauce, egg whites, sour cream, vanilla and strawberries. Mix dry ingredients with wet ingredients just until moistened. Pour mixture into prepared pan. Bake 60 to 65 minutes. |
