MOM'S EAST COAST FIRM BREAD PUDDING

Milk (2 inches from top of casserole)
1 1/2 cups sugar
3 to 4 eggs, beaten
1 tbsp vanilla
1 tsp ground cinnamon
1/2 tsp ground nutmeg
Dash salt
3/4 to 1 lb. bread (any white type)
Handful of raisins

Do not preheat oven until nearly prepared.

Mix together everything except the bread and raisins in a 2 quart casserole, (should be about 3/4 full before adding bread), then tear bread into 1-2 inch pieces into casserole, pressing down gently with spatula as necessary to cover. (Preheat oven to 350 before finished tearing bread).Mixture should be slightly "soupy" Poke raisins through-out, then dot top with butter:

Bake for about 1 to 1 1/4 hours. Will appear nicely browned and slightly dry looking. Shake gently to see that center is done.

Makes 8 servings
