Date and Rice Lunch Box Salad with Orange Dressing Recipe By : The California Date Adminstrative Committee Servings: 4
3 cups cooked white and wild rice mix 1 medium tart green apple -- cored and chopped 1 cup cooked ham -- diced 1 cup sliced celery 2/3 cup chopped dates 1/2 cup red onion -- finely chopped
ORANGE DRESSING 1/2 cup olive oil -- extra light 1/4 cup fresh orange juice 1/4 cup red wine vinegar salt and pepper -- to taste
Dice 4 ounces of cooked ham to make about 1 cup.
Dressing: Whisk together all the ingredients until well combined.
Salad: Combine all ingredients for the salad and toss to mix. Add the dressing and toss to coat. Chill 2 to 3 hrs. before serving.
