Cookie Icing (hardens as it dries)
Rec.food.recipes/Jody Cline (1995)

This is a cooked Sally Ann icing. It hardens up as it dries. Before it dries, add any decorations you wish; they stay "glued" to the cookie. I've never colored it, but I think some powdered food coloring added with the powdered sugar would work fine.

This makes enough for about 40 (3-4 inch) cookies.

3/4 cup water
1 envelope unflavored gelatin
3/4 cup sugar
3/4 cup powdered sugar
1 tsp. baking powder
1 tsp. vanilla

In a 2-quart saucepan, combine the water and gelatin; let stand 5 minutes. Stir in the sugar., bring to a boil. Reduce heat and simmer 10 minutes. Stir in powdered sugar; beat until foamy. (at this point, I pour the sugar-gelatin mixture into the KitchenAid mixing bowl, then add the powdered sugar and continue. If you use a hand mixer you can pour the powdered sugar into the cooking saucepan and beat it). Stir in the baking powder and vanilla; beat at high speed until thick. Frost cookies, decorate if desired. Let dry before storing cookies.
