CHICKEN SPAGHETTI SAUCE

2 Tbsp vegetable oil
1 tsp dried oregano
1 large onion, chopped
1 tsp dried basil
3 garlic cloves, finely chopped
1 bay leaf
1 lb. chicken, finely chopped
1 cup dry red wine
1 (28 oz) can plum tomatoes, chopped, with their juices
1 (6 oz) can tomato paste
1/4 tsp freshly ground black pepper
Dash of cayenne pepper
salt (to taste)

In a large saucepan, heat oil over medium heat. Add onion and cook until soft, about 3 minutes.

Add garlic and cook and 1 minute longer.

Add chicken and cook until white, about 4 minutes.

Add tomatoes, tomato paste, oregano, basil, bay leaf, wine, black peppers, and cayenne. Reduce heat and simmer 1 hour, until mixture thickens. Season with salt to taste.
