CHICKEN BREASTS WITH ORANGE SAUCE
1 1/2 lbs. chicken breasts, deboned and skinned 1 tsp. salt 1/2 tsp. paprika 4 tsp. margarine 1 cup orange juice 1 tbsp. grated orange rind 1 tsp. chopped tarragon Steamed rice (for serving) 1 orange, sliced, for garnish
Sprinkle chicken with salt and paprika; brown lightly in margarine on medium high heat. Place chicken in a casserole dish; add orange juice, rind and tarragon.
Cover and cook in a 325 degree F oven for 30 minutes.
Serve chicken and sauce over steamed rice. Garnish with orange slices.
