GOOD OLD BEAN SALAD

4 handfuls of yellow wax beans, stalk ends removed
2 to 3 heaping teaspoons good French mustard, to taste
2 tablespoons good-quality white-wine vinegar
7 tablespoons olive oil
Sea salt and freshly ground black pepper
1 medium shallot, peeled and finely chopped
1 tablespoon capers (optional)
1/2 clove garlic, finely grated
Fresh chervil (optional)

Bring a pot of water to a boil. Add beans, cover and cook for 4 to 5 minutes.

Meanwhile, in a jar or bowl, combine mustard and vinegar. While stirring, add olive oil. Season with salt and pepper. Add shallot, capers, if using, and garlic.

Remove one of the beans from pot and check if it's cooked. If it holds its shape but is also soft to the bite, it's perfect. Drain beans in a colander and place in a serving bowl. Pour some of mustard mixture over the hot beans and toss. Sprinkle chervil on beans, if using.

Serve as a salad or side dish.

Makes 4 servings.
