Foot Potato Salad
4 cups cooked potatoes, chunked (if you lined 'em up it'd be 'bout a foot of 'em
4 hard boiled eggs, chopped
1 1/2 cups sliced celery
1/4 cup sliced radishes
1/2 cup sliced green onions (includin' tops)
1 cup Kraft mayonnaise
1 Tbsp. apple cider vinegar
1 1/2 tsp salt
2 tsp. French's yellow mustard
1/2 tsp. celery seed
Mix together the first five things. Thoroughly blend the mayonnaise, vinegar, mustard, celery seed and salt. Pour over potatoes and mix with your hands. Chill. This carries good.
Big Molly's Cherry Cobbler
4 cups canned pie cherries (NO pits!)
1/4 cup quick tapioca
1 pinch ground cloves
1/4 tsp. cinnamon -- heaped up
1 pinch salt
1 cup of brown sugar
1 Tbsp. grated orange rind
2 cups of Bisquick (plus what you need for Bisquick)
In a great big pan mix the dry stuff (but not the bisquick) and stir together with the pie cherries. Bring it up to a boil and cook for five minutes. Oleo down a 2
quart baking dish and pour your cooked mixture into it. Make your Bisquick like it says on the box and spoon it on top of the cherries. Put it in the oven at 400 degrees for 20 to 25 minutes or until the Busquick is good and brown.
Serves at least four and maybe more.
These are two of our favorite recipes from that cookbook.
