Recipe: How to Blanch Almonds in a Microwave

BLANCHED ALMONDS

Place 1 cup water in 1 quart casserole; cover. Microwave at High 2 to 3 1/2 minutes, or until boiling. Add 1 cup unblanched whole shelled almonds. Microwave, uncovered, at High 1 minute. Drain. Slip skins off. Spread on paper towels to dry.

Makes 1 cup
