ISO: PWG Bracken's Stay-a-bed stew

My mom used to do Peg Bracken's Stay-a-Bed stew for our family of 4. I thought she did the stew at 300F for 3 hours. Has anybody done it for 3 hours at 300, instead of 275 for 5 hours?
