When you say polenta, are you referring to polenta that has been prepared and is purchased in a tube ready-to-eat, or are you referring to polenta meal (dry, like flour)? If it is polenta meal, you can make cornbread (cornbread is very easy and quick to make). Then you use the cornbread as you would for regular bread stuffing (we call it stuffing here in California). Alternatively, can you buy corn bread mixes in Australia? If so, just use that. If not, I'm sure the readers here at TKL have lots of cornbread stuffing recipes posted. If not, post a message back and I will send you a recipe. Hope this helps.
