re:shredded phyllo

I just finished a class on phyllo dough. The instructor, a pastry chef, said that phyllo will shred when it has been improperly stored (usually at the supermarket) and there is nothing you can do with it. She recommended always buying two boxes, from different placed in the freezer, in the hope that one would be intact. Good luck.
