Recipe: Stovetop Beef Stuffed Peppers (using bread crumbs, 1970's)

STOVETOP BEEF STUFFED PEPPERS

4 or 5 medium red and/or green peppers
1 lb ground beef
1 cup soft, stale bread crumbs
1 egg, slightly beaten
1/4 cup finely chopped onion
1/4 cup milk
2 tbsp catsup
1 tsp salt
1/2 tsp dry mustard or 1 tsp prepared mustard
1/4 tsp prepared horseradish (optional)
1/4 tsp ground black pepper
Chopped fresh parsley, to garnish

Buy chunky peppers with bottoms that will stand, cut off stem ends and remove seeds. Wash peppers.

Mix remaining ingredients, except parsley. Fill peppers with the mixture.

Put in a pan or kettle deep enough for the peppers and add about 1-inch of water. Cover and simmer, adding a little more water if necessary, for 45 minutes, or until the meat is done.

Garnish with a parsley.

Makes 4 or 5 servings
