Recipe: Cornbread Salad

Cornbread Salad

1 box Jiffy cornbread mix, baked as directed
4-5 tomatoes, chopped
1/2 c. green onions, chopped
1 c. cheese
12 slices bacon, browned and crumbled
1/2 c. sweet relish or dill relish
1/2 c. salad dressing
1/2 c. sweet pickle juice or dill relish juice

Mix together tomatoes, green onions, bacon and sweet relish. Spread half of this mixture over half of the cornbread, crumbled in a casserole dish. Spread second layer of cornbread and cover with remainder of chopped mixture. Mix together salad dressing and sweet pickle juice. Pour over layer mixture, sprinkle cheese over top and let set overnight
