GORGONZOLA CREAM SAUCE WITH ANGEL HAIR PASTA
1 cup low fat buttermilk, divided use
1 tablespoon cornstarch
2 tablespoons crumbled Gorgonzola cheese
1 dash ground nutmeg
8 ounces uncooked angel hair pasta
1/2 cup frozen peas, thawed
2 tablespoons chopped toasted walnuts
1/3 cup grated Parmesan cheese (for serving)
Mix 1 tablespoon of the buttermilk with the cornstarch to make a smooth paste. In a heavy-bottomed saucepan, stir buttermilk cornstarch mixture, remaining buttermilk, Gorgonzola, and nutmeg. Cook over medium heat, stirring almost constantly, to melt the cheese and thicken the mixture.
Cook pasta according to package directions; drain well.
Just as cheese sauce begins to thicken, add peas and cook long enough to heat through. Stir in toasted walnuts.
Serve the sauce over the pasta with Parmesan on the side.
