ORANGE AND GREEN RIBBONS
1 medium carrot
1 small cucumber
1/2 teaspoon grated lemon zest
2 tablespoons fresh lemon juice
2 tablespoons sugar
Using a vegetable peeler, peel the carrot and cucumber. Still using the peeler, cut both in long, thin strips, to resemble ribbons. For the cucumber, cut close to the center but don't cut into the seeds. Discard the seeds.
Put the strips in a medium bowl. Add the lemon zest, lemon juice, and sugar, tossing gently to coat. Serve immediately.
Makes 4 servings (1/2 cup per serving)
