Recipe: Sweet Onion and Pepper Relish

I am not familiar with Harry and Davids Pepper and Onion Relish, but I do have 2 relish recipes you can try.

Sweet Pepper & Onion Relish
6 cups finely chopped onions
3 cups finely chopped red bell peppers
3 cups finely chopped green bell peppers
1 1/2 cups sugar
6 cups white vinegar (labeled 5% acidity)
2 tablespoons pickling salt
Directions:
Combine all ingredients in a 6 to 8-quart saucepan. Bring to a boil and simmer until the mixture thickens and is reduced by one-half, approximately 30 minutes. Immediately fill hot half-pint jars with the mixture, leaving 1/2-inch headspace. Carefully run a non-metallic utensil down the inside of jars to remove trapped air bubbles. Wipe jar tops and threads clean. Place hot lids on jars and screw on rings. (See lid manufacturer's instructions) Process in a simmering hot water bath at 175 degrees F. for 20 minutes.
Yield: 9 half-pints Sweet Pepper & Onion Relish
20 - 25 sweet red peppers (medium size)- coarsely chopped
4 large white sweet onions - coarsely chopped
1 or 2 very finely chopped jalapeno peppers
3 cups sugar
3 cups apple cider vinegar
2 T. salt
Place all ingredients in a large pot. Stir to blend thoroughly. Bring to a low boil. Reduce heat and simmer for 30 minutes. Spoon into pint jars leaving 1/2-inch headspace. Apply lids that have been treated according to manufacturer's directions. Process in a simmering hot water bath at 175 degrees F. for 20 minutes.
