Recipe: Thanksgiving Ground Turkey Skillet Meatloaf (Working Mother Magazine, 1980's)

THANKSGIVING GROUND TURKEY SKILLET MEATLOAF

Instant Thanksgiving Dinner

"This is a delicious combination of ground turkey and stuffing in a meat loaf. Serve with cranberry sauce, a green vegetable and mashed potatoes"

1 medium onion, chopped
1/2 rib celery, chopped
2 tablespoons butter
1 cup small French bread cubes, day old
2 tablespoons dry white wine (or water)
1 or 2 tablespoons poultry seasoning, to taste
Ground Black Pepper to taste
1 egg, beaten
1 teaspoon table salt, or to taste
1 lb ground turkey
1 to 2 tablespoons vegetable oil, as needed
4 cups low-sodium chicken broth

FOR THE SAUCE:
5 tablespoons butter
6 tablespoons flour

In a medium saucepan over low heat, cook onion and celery in butter until wilted but not brown. Turn into a large mixing bowl.

Add bread cubes to vegetables and toss to mix. Add wine or water and toss again. Add poultry seasoning and pepper and toss once more.

In a separate bowl, mix egg, salt and ground turkey; blend thoroughly. Add turkey mixture to bread mixture and work everything together. Form into a single large patty about 1 1/2 to 2 inches thick.

Heat oil in a large skillet over medium heat and brown patty on both sides ( about 5 minutes ); pour off any excess oil. Add broth to skillet, bring to a boil, cover, lower heat and simmer for 10 minutes. Taste broth and add more salt if desired. Re-cover and simmer for 30-minutes.

Remove patty to a platter and keep warm. Leave broth in skillet.

TO MAKE THE SAUCE:
Melt butter in a small saucepan and stir in flour; cook for 1 minute over low heat. Return skillet of broth to heat and bring to a boil; whisk in flour mixture and cook, stirring constantly, until thickened.

Return turkey patty to skillet, cover, lower heat and simmer
5-minutes.

Remove turkey patty to platter and cut into 6-wedges. Pour sauce into gravy boat.

Makes 6 servings
