Recipe: Bourbon Chicken/Tequila Chicken

BOURBON CHICKEN (OVEN)
1 14 oz jar hickory smoked bar B que sauce
2 2tbls Soy sauce (reg. or lite)
2 tblsp. Bourbon
2 tblsp. dijon mustard
1 3-4 lb chicken or piecs Cut up and skinned
Pour barbecue sauce into bowl. add soy sauce and bourbon to emplty barbecue sauce bottle and shake well. Combine with barbecue sauce. Add mustard and stir to blend. Cover chicken with sauce and marinate overnight turning once. Preheat oven to 375 degrees. Bake uncovered 15 minutes. Reduce temperature to 350 degrees and continue baking until chicken is cooked, about 45 minutes. If prefer instead of 350 degrees cook at 325 degrees for about 1 hours.


DRUNKEN CHICKEN

1 chicken or pieces if you prefer
1/2 cup flour
salt and pper to taste
1/2 cup veg. oil
1 cup sliced onions
3 cloves garlic minced
1/2 cup blanched almonds
1/2 cup sliced pimento/green olives
1/12 cup chicken stock
1 tblsp. cornstarch
1 cup tequila
1/3 to 1 cup white vinegar (your preference)
1 tblsp sugar

Dredge chicken in first three ingredients. brown in veg/ oil. Remove chicken and put in casserole. Add next four ingredients to skillet and cook till soft. add the rest till thickened. Pour over chicken for 20 25 minutes. till done. serve 4-5 I forgot to mark down on my recipe the temp. to use. guess it would be about 350-375 Hope you enjoy one of these. Pat
