Recipe: Carrot Cumin Firecrackers (gluten free crackers)

No worries - these are a cinch to make, and you probably have everything you need in your cupboard right now. The carrots, cumin seeds, and crushed red pepper flakes really do make these look like pyrotechnic treats, and the taste is simply explosive!"

2 tablespoons flax seeds
12 tablespoons / 180ml water, divided use
3 cups / 300g gluten-free rolled oats, divided use
1 tablespoon cumin seeds
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon ground chipotle or smoked hot paprika
1 teaspoon fine sea salt
3 tablespoons coconut oil, melted
1 medium carrot, grated
In a small bowl, combine the flax seeds with 6 tablespoons / 90ml of the water. Set aside to gel, about 15 minutes.
Meanwhile, in a food processor, pulse 2 3/4 cups / 275g of the oats until they resemble a rough flour. Add the spices and salt; pulse to incorporate.
Transfer the oat mixture to a large bowl. Add the coconut oil, flax seed gel, and the remaining 6 tablespoons / 90ml of water; stir to combine. Add the carrots and finish mixıng.
Preheat the oven to 350 degrees F/ 180C.
Divide the dough in half and place one half on a large sheet of parchment paper and then set another sheet on top.
Using a rolling pin, roll out the dough into a very thin round or square. Remove the top layer of parchment and sprinkle 2 tablespoons of the remaining rolled oats on top, replace the parchment, and roll to set.
Remove the top piece of parchment paper and score the dough into the desired cracker shapes (squares, rectangles, triangles) using the tip of a sharp knife. Slide the dough and the parchment paper onto a rimmed baking sheet and place it in the oven.
Bake the crackers until fragrant and golden brown, 25 to 30 minutes. Repeat steps 4 through 6 with the remaining dough.
Makes about 40 small crackers
