Thank You: Barley Sugar Recipe - and Pearl Barley info
Misc.Have been trying to find out how much cream of Tartar was used! Thanks so much!
*Real* Barley Sugar used to be widely available in this area at Christmas, but it's getting harder to find.
Pearl barley is simply barley that has been processed (polished) enough to completely remove the outer hull. It cooks quicker than pot barley, but is less nutritious. (Kind of like white rice -vs- brown rice, I guess.) Both are usually available in grocery stores here.
If you can only find pot barley, you could probably use that and just cook it an extra hour or more to get to the starches. Note: The timing is just a guess based on the fact that pearl barley is usually cooked for about a half hour, not two hours. :-)
