BLUEBERRY BALSAMIC VINAIGRETTE
"Fresh blueberry puree blended with balsamic vinegar, cinnamon and ginger make a vibrant fat free dressing to serve over salad greens."

3/4 cup blueberries
2 tablespoons balsamic vinegar
2 tablespoons water
1 tablespoon packed light brown sugar
1 tablespoon fresh lemon juice
1/4 teaspoon McCormick Cinnamon, Ground
1/4 teaspoon McCormick Ginger, Ground
Place all ingredients in blender container; cover. Blend on high speed until smooth. Refrigerate until ready to serve.
Serve over salad greens with crumbled or sliced goat cheese, if desired.
Makes 6 servings
