I make this quite often and my "picky" kids love this.
I modified this to work with organic foods.
Chicken Bake
1 1/3 cups water
3/4 cup uncooked long-grain white rice
1 to 1/2 cups organic sour cream
1/2 tbs onion powder
1/4 tbs black pepper
1/2 tbs garlic powder
1/2 tsp salt
1 1/2 lb skinless, boneless chicken breast halves (4-6)
1 1/2 cups shredded cheddar cheese
Mix everything except the chicken in the caserole dish that you'll be baking this in. Top with the chicken that is seasoned with a little salt, pepper, and garlic powder.
Cover and bake at 375 degrees for 45-50 minutes or until chicken is no longer pink and rice is done.
Uncover and sprinkle cheese over chicken
You can also add 2-3 cups of fresh or frozen veggies into rice mixture before topping with chicken, but I've found from my experience that your rice doesn't get quite done when these are added.
