Recipe(tried): Coconut Rice - This rice makes great leftovers! (Fried Coconut Rice & Coconut Rice Pudding)
Recipe CollectionsAs I said when i posted the recipe, it makes a lot, so last night while searching for something for dinner I turned some of that leftover Coconut rice into a very, very good fried rice and some great rice pudding. I didn't do any measuring, but wanted to share my, "unrecipes", anyway!
I heated a large nonstick frying pan, sprayed it with a bit of Pam and poured in some egg replacement. When the bottom of the eggs were cooked I flipped them over and cooked the other side. I slid them from the skillet onto a cutting board and chopped them into bite-sized pieces. I heated a bit of canola oil in the same frying pan after spraying it again with Pam. I scattered the cold rice over the hot oil, separating any clumps. When it was heated I added a handful of chopped green onions, the cooked egg replacement pieces and a dash or two of soy sauce. I didn't have any, but I think a couple sprinkles of sesame oil would have been a good addition at this point. When everything was thoroughly heated I transfered it to a serving plate, broke us some salted cashews and sprinkled those over the fried rice. It was a very yummy dish.
To the remaining leftover unfried rice I added some egg replacement,skim milk, a bit of Splenda for Baking, a half of a handful of raisins, a pinch of nutmeg and a dash of cinnamon. I baked it for about 45 minutes in a 350 degree oven. This was also very, very tasty with a little cold milk poured over it.
