Recipe: Connecticut Raspberry Thimble Cookies

CONNECTICUT RASPBERRY THIMBLE COOKIES

"This delicious cookie recipe was submitted by Mary Mullen, and even though she has moved away, her Raspberry Thimble Cookies are still being baked and enjoyed by the families of St. Timothy's parish. What a nice way to be remembered!" - Anne Gnazzo

1/4 pound butter, softened
1/4 pound margarine, softened
2 egg yolks
1 tsp vanilla
1 cup sugar
2 1/2 cups sifted flour
Raspberry jam

Heat oven to 350 degrees F.

Cream butter and margarine thoroughly. Gradually add the sugar, beating until light and fluffy. Add egg yolks, one at a time, beating after each addition. Add sifted flour and vanilla.

Shape mixture between palms of hands into balls 1-inch in diameter. Place on ungreased baking sheet, 2 inches apart. With the top of middle finger, make an indentation on top of each cookie. Fill with raspberry jam.

Bake until nicely browned (about 15 minutes).
