I have a Weight Watchers 365-day Menu Cookbook Copyright 1981. I did not see a recipe for Crisy Oven-Fried Mexican Chicken, but here is a basic recipe from the cookbook for:
CRISP "OVEN-FRIED" CHICKEN
1 1/2 ounces corflakes, crumbled
1 tsp oregano leaves
Dash each salt, pepper, and garlic powder
12 ounces skinned and boned chicken breasts, cut into 1-inch wide strips
Prehet ovn to 350 degrees F. Coat a nonstick baking sheet with cooking spray.
In small bowl combine cornflakes, oregano, salt, pepper, and garlic powder.
Dip chicken strips in water and then in corflake crumbs, pressing the crumbs to make sure they stick. Place chicken on prepared baking sheet. If any crumbs remain, sprinkle evenly over chicken.
Bake at 350 degrees for 20 minutes or until done.
Per Serving: 279 cal; 41g protein; 3g fat; 19g carb; 423mg sodium. There is no fiber measurement noted.
