Recipe: Freezing Baker's Compressed Yeast (Fresh Yeast Blocks)

Hi Marshall,

Yes, you can freeze yeast in block form (fresh yeast). They will keep for up to 4 months in the freezer. Cook's Thesaurus suggests thawing fresh yeast blocks for a day in the refrigerator before using.

If you want to be very sure before freezing a large quantity, try freezing a block, thawing it and using to bake to see if you notice any differences.
