HOW TO BAKE A CHEESECAKE IN A ROASTER OVEN

"I bake cheesecakes in my 18 qt Nesco all the time and have been doing so for years. Use the same time and temperature that the (standard) recipe calls for. You may need to pre-heat the Nesco before baking in it. It is always a good idea to make sure your settings are correct. Use the Rack and put a cup of water in the bakewell before you start. Leave the lid on the roaster for about a hour after the baking time is up. This will reduce cracking." - Hal/OH
