Recipe: Chicken Tampico

CHICKEN TAMPICO

1 large pkg yellow rice
1/2 cup chopped onion
4 ounces green chilies
1 small jar diced pimentos
2 cups shredded cheddar cheese, divided use
1 (8 oz) carton cottage cheese
1 (8 oz) container sour cream
1 (8 oz) pkg cream cheese
6 chicken patties

Preheat oven at 400 degrees F. Coat a 13x9-inch baking pan with cooking spray.

Prepare rice according to package directions.

Add onion, green chilies, and pimentos to rice; place mixture in prepared pan.

Put 1 cup cheddar cheese, cottage cheese, sour cream, and cream cheese in a saucepan over medium heat and stir to make a cheese sauce. Pour cheese sauce over rice.

Put chicken patties on top of cheese sauce. Cover with the remaining 1 cup cheddar cheese.

May be frozen prior to baking.

Bake for 30-45 minutes.
