Recipe(tried): Meatloaf Dinner with Sides... Cottage Style Meat Loaf, Garlic Parmesan Mashed Potatoes, Southern Green Beans, Supreme Sour Cream Chocolate Chip Cake with Chocolate Glaze
MenusHi Everyone! Tonight we are going to enjoy an old fashioned meatloaf dinner with Mashed Garlic Potatoes, Southern String Beans, Creamed Corn, Gravy and Dinner Rolls. And for dessert, a delicious cake Carolyn from NJ once posted.

COTTAGE STYLE MEAT LOAF
Makes 6 servings
FOR THE MEAT LOAF:
1 cup bread crumbs
1/2 cup ketchup
1/3 cup tomato juice
2 eggs beaten
2 tsp. mustard
1 garlic clove, minced
1/2 tsp. salt and pepper
1/8 tsp. ground cayenne pepper
1/4 cup finely mined onion
1 lb. ground sirloin
FOR THE TOPPING:
1/4 cup ketchup
1/2 tsp. mustard
2 tsp. brown sugar
Combine all the ingredients for the meat loaf except the beef; mix well. Add the meat and mix gently.
Line a loaf pan with foil. Press in the meat mixture.
Combine topping ingredients and put over the meat.
Bake at 400 degrees F for 45 minutes. Drain any fat and let rest for 5 minutes before cutting.
GARLIC PARMESAN MASHED POTATOES
serves 6
6 garlic cloves, whole
3 lbs. potatoes, peeled and quartered
2 t. salt, divided
1/4 c. warm whipping cream
1/4 c. parmesan cheese
3 T. butter, softened
1/3 c. fresh chopped parsley
1/2 t. white pepper
Bring potato quarters, garlic cloves, 1 t. salt and water to cover to a boil and cook for 25 min. or until potatoes are tender. Drain and mash. Stir in warm whipping cream, butter, parsley, white pepper, & parmesan and blend all together.
SOUTHERN GREEN BEANS
1 lb. fresh green beans, ends snapped off
2 large onion slices, chopped
1 garlic clove
2 bacon strips
2 T. veg. oil
pepper
salt
1-2 drops of hot sauce
splash of red wine vinegar or balsamic vinegar
Cook bacon pieces with onion in a med. pot. After 3 min. add the oil and stir. Add seasonings and garlic clove. Add vinegar and beans, stir to coat. Cover and lower heat to med-low. Check after 5 min., stir, and lower heat to low. Cook for about 25 min or tender. You should have a delicious brown sauce coating the beans when they are ready.
Carolyn-NJ (08:06:37) : Even though this is from a boxed cake mix, it is one of my favorite chocolate cake recipes. Beware, though, that you?d better be a chocoholic ? it is very, very rich. But I sure hope I can still whip one up once I get to heaven!
SUPREME SOUR CREAM CHOCOLATE CHIP CAKE
1 box Duncan Hines Devil?s Food Cake Mix
1 small box instant chocolate pudding
4 eggs
? cup oil
1 cup water
1/2 to 3/4 pint sour cream
6-oz. bag chocolate chips (semi-sweet)
Mix all ingredients except the chocolate chips until smooth and creamy. Fold in chocolate chips. Pour into a well-greased and floured Bundt or tube pan. Bake at 350? for 55-60 minutes. Remove and let cool. Refrigerate if keeping more than a day or two (it won?t last that long).
I have served this plain with whipped cream or vanilla ice cream but often I add still more chocolate by making the following glaze to drizzle over the top:
CHOCOLATE GLAZE
2 tablespoons butter or margarine
2 tablespoons Hershey?s Cocoa (not instant)
2 tablespoons water
1 teaspoon light corn syrup
1 cup confectioners? sugar, sifted
1/2 teaspoon vanilla
Melt butter in small saucepan over low heat; add cocoa and water, stirring constantly, until mixture thickens. Add corn syrup. Do not boil. Remove from heat; blend in confectioners? sugar and vanilla. About 1/2 cup glaze. Immediately drizzle over bundt cake.
Note: My hubby likes to pop a slice in the microwave just a few seconds to re-melt the chocolate chips.
