APPLE-FILLED SWEET BREAD
Coffee Cakes - card 2

"This is just the right treat for a special coffee hour, or an autumn or winter brunch."


45 minutes preparation, 1 hour rising, 15-20 minutes baking
Makes 2 loaves

2 packages active dry yeast
1/2 cup warm milk (105-115 degrees F.)
2 to 2 1/2 cups all-purpose flour
1 tablespoon granulated sugar
1/4 teaspoon salt
1/2 cup (1 stick) chilled butter, cut into small pieces
1 large egg, lightly beaten
FOR THE FILLING:
3 medium Mclntosh or Golden
Delicious apples, peeled, cored, and thinly sliced
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
FOR THE GLAZE AND ICING:
1 large egg
1 teaspoon water
1 cup confectioners' sugar
1 tablespoon water

In a small bowl, dissolve yeast in warm milk. Let stand until foamy, 5 to 10 minutes.

In a large bowl, mix together 2 cups of flour, sugar, and salt. Using a pastry blender or 2 knives, cut butter into flour mixture until coarse crumbs form.

Add yeast mixture to flour mixture. Add beaten egg. Mix just until flour mixture is moistened.

On a floured surface, knead dough just until it holds together, 1 to 2 minutes, adding more flour to prevent sticking.

Grease a baking sheet. Divide dough in half. Using a floured rolling pin, roll each dough half into a 12 x 8-inch strip. Place on prepared baking sheet.

To prepare filling, mix together all ingredients. Spoon half of filling in a 4-inch-wide strip lengthwise down center of each dough strip. Cut dough on both sides of filling crosswise into 1-inch strips just to filling. Place strips over filling, alternating sides and overlapping slightly.

Pinch ends to seal. Cover loosely with a damp cloth; let rise in a warm place until puffy, 1 hour.

Preheat oven to 425 degrees F.

To prepare glaze, mix together egg and water. Brush over loaves.

Bake loaves until they are golden brown, 15 to 20 minutes.

To prepare icing, mix together confectioners' sugar and water.

Drizzle icing over hot loaves. Transfer to a wire rack to cool.

Baking Tips:
When braiding dough strips, be sure that the end of each strip is covered by the next strip.
