Recipe: Palace Hotel of San Francisco's Chocolate Cake (Campfire Marshmallows, 1930)

1 cup sugar
1 teaspoon salt
1 cup sour cream
2 eggs, well beaten
1 1/2 cups pastry flour
1 teaspoon baking soda
2 squares (1 ounce each) unsweetened chocolate, melted
1/2 cup hot water
16 Campfire marshmallows
Chocolate Icing of your choice (for frosting)
Preheat oven to 350 degrees F. Grease 2 (8 or 9-inch) layer cake pans.)
Mix sugar, salt and sour cream. Add well beaten eggs.
Mix and sift flour with baking soda and combine with egg mixture. Add melted chocolate and hot water. Cut marshmallows in quarters and stir into cake mixture. Pour into prepared pans.
Bake at 350 degrees F for 20-30 minutes. Remove from pans and cool on a rack.
Frost (the center and top) with chocolate icing.

Chef Roemer, who presides over the famous Palace kitchen, was born in Alsace where he learned his art. Before coming to America, he served fashionable hotels in Cannes and Cantrexville, France, and in the German Black Forest. He was chef of the official banquets of the Panama Pacific Exposition and is widely known as a lecturer upon the culinary art. He has been at the Palace Hotel for fifteen years."
