Recipe(tried): Mrs. Beasley's Bakery Banana Bread (using Grape Nuts cereal, original recipe, 1980's)

MRS. BEASLEY'S BAKERY BANANA BREAD
(original recipe)

1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 medium-size ripe bananas
1 teaspoon vanilla
1 cup sugar
1 egg
1/4 cup butter or margarine, melted
1/2 cup Grape-Nuts cereal

Preheat oven to 350 degrees F.

Mix together flour, baking soda and salt; set aside. Grease an 8x4-inch loaf pan.

In bowl mash bananas with the vanilla. Add sugar and egg; beat well.

Stir in melted butter, cereal and the flour mixture just until blended. Turn into prepared loaf pan.

Bake in preheated oven 1 hour or until pick inserted in center comes out moist-clean. Cool in pan on rack 10 minutes; remove from pan; cool completely.

Wrap airtight; store overnight before slicing

Makes 1 loaf; 16 slices
