Recipe: Sausage Broccoli Minestrone Soup (with potatoes)
SoupsSAUSAGE BROCCOLI MINESTRONE SOUP
3 to 4 tbsp olive oil
1 lb Italian sausage (or chicken sausage), casing removed
2 cups coarsely chopped onion
1 clove garlic, minced
8 cups water (or defatted chicken stock)
2 to 3 fresh basil leaves
1 to 2 tsp salt (optional)
freshly ground black pepper
1 pinch dried hot pepper flakes
3 cups diced potatoes
1 bunch fresh broccoli, trimmed and cut into small pieces
1/2 cup Italian parsley
In a large pot add olive oil and set over medium heat. Add sausage and onion and saute until meat is browned, about 5 minutes.
Add garlic and saute 1 minute.
Add water or stock, basil, salt, black pepper, and pepper flakes. Bring to boil. Cover and simmer about 20 minutes.
Add potatoes and simmer until potatoes are almost done.
Add broccoli and parsley and simmer until potatoes are tender.
Servings: 8
