Recipe: Green Gazpacho (using green grapes and grape juice) (food processor)

Green Gazpacho (using green grapes and grape juice) (food processor)

3 green onions, cut into halves
2 stalks celery, cut into large pieces
1 medium cucumber, peeled, seeded and cut into large pieces
1 green bell pepper, seeded, cut into large pieces
1 cup green seedless grapes
1/4 cup loosely packed cilantro leaves
2 tablespoons lime juice
1 tablespoon Tabasco green pepper sauce
1/4 teaspoon salt
1 cup white grape juice

Combine green onions, celery, cucumber, green bell pepper, grapes, cilantro, lime juice, green pepper sauce and salt in food processor. Pulse ingredients just enough to combine, but do not puree.

With machine running, pour white grape juice through feed tube and pulse machine just to combine ingredients.

Refrigerate until ready to serve.

Makes 4 servings
