Recipe: Savory Lemon Chicken (using chicken breasts and French fried onions)

4 boneless skinless chicken breast halves
Salt and pepper
1/4 cup flour
1 tablespoon oil
1 cup chicken broth
1 1/3 cups French's French Fried Onions, divided use
1 tablespoon lemon juice
4 thin slices lemon
Hot cooked rice (optional, for serving)
Season chicken with salt and pepper and coat with flour. In skillet cook chicken 10 minutes in 1 tablespoon hot oil until well browned on both sides.
Stir in chicken broth, 3/4 cup French fried onions, lemon juice, and lemon slices. Heat to boiling. Simmer, covered 5 minutes until chicken is no longer pink and sauce thickens slightly, stirring.
Top with remaining French fried onions. Serve with rice if desired.
