Recipe: Sugar Cookies and Stir and Drop Sugar Cookies (using oil)

EASY SUGAR COOKIES
(Cookie dough is refrigerated before baking.)
2 eggs
2/3 cup vegetable oil
2 tbsp. vanilla
3/4 cup sugar
2 cups sifted flour
2 tsp. baking powder
1/2 tsp. salt
Colored sugar crystals or cinnamon-sugar (for sprinkling on top)
Beat eggs with fork until blended. Stir in oil and vanilla. Add sugar and mix well.
Sift flour, baking powder and salt together and add to first mixture. Mix well with a spoon (don't use a mixer). Cover and refrigerate several hours or overnight.
WHEN READY TO BAKE:
Drop cookie dough by about 1/2 teaspoons on a lightly greased cookie sheet. Top each cookie with colored sugar crystals or a cinnamon-sugar mixture.
Bake at 350 degrees F for about 10 minutes or until light brown.
STIR-N-DROP SUGAR COOKIES
Makes about 3 dozen (3-inch) cookies
4 eggs
1 1/3 cups vegetable oil
4 tsp. vanilla
2 tsp. grated lemon rind (optional)
1 1/2 cups sugar
4 cups flour
4 teaspoons baking powder
1 teaspoon salt
Beat eggs with fork until well blended. Stir in oil, vanilla and lemon rind (if using). Stir in sugar until mixture thickens; set aside.
Sift together flour, baking powder and salt. Stir into egg mixture (dough will be soft). Drop by teaspoonfuls about 2-inches apart on ungreased baking sheet. Flatten with greased bottom of glass that has been lightly oiled and dipped in sugar.
Bake in a 400 degree F oven for 8-10 minutes or until a delicate brown. Remove immediately from baking sheet.
