Recipe: Rhode Island Cornflake Macaroons

RHODE ISLAND CORNFLAKE MACAROONS

2 large egg whites
1/2 cup sugar
1/4 tsp salt
2 cups corn flakes
1/2 cup flaked coconut

Preheat oven to 275 degrees F.

Beat egg whites until almost stiff. Gradually add sugar and continue beating until stiff. Beat in salt.

Fold in corn flakes and coconut. Drop mixture by teaspoon onto well greased cookie sheet.

Bake in preheated 275 degree F (slow oven) for 50 minutes OR until golden brown. Watch carefully.

Makes 24 cookies
