THE CHOCOLATE GRILLE'S BLUEBERRY CREAM CHEESE COFFEE CAKE
for the Cake Batter:
1/2 cup butter, softened
1 1/4 cups granulated sugar
2 eggs
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon salt
3/4 cup milk
1/4 cup water
2 cups blueberries
1 (8 oz.) package cream cheese, cubed and softened
for the Topping:
1/2 cup all purpose flour
1/2 cup granulated sugar
2 tablespoons grated lemon rind
2 tablespoons butter, softened
Preheat oven to 375 degrees F. grease a 9x9-inch baking pan.
In mixing bowl, combine butter, sugar and eggs. Beat at medium speed until well mixed.
Add flour, baking powder and salt into mixing bowl and continue mixing until all ingredients are incorporated. Make sure to stop and scrape sides to ensure that all the dry ingredients are mixed in.
Add milk, water and cream cheese. Mix. Add blueberries. Mix. Pour batter into a greased 9x9 baking dish
In the same mixing bowl, combine all ingredients for topping. Beat until mixture consists of small crumbs. Spread topping onto the cake mixture.
Bake at 375 degrees F for 45 minutes or until golden brown on top.
