Recipe: Turkey for 75 and Turkey in a Roaster Oven

That's quite a crowd you're cooking for! According to Butterball, plan on 1 1/2 lbs. of turkey per person if you want leftovers.
I have one suggestion, you might want to roast most the the turkeys a day or two ahead. Slice and pan the cooked turkey and reheat for serving. Then you can also make your gravy ahead which will save you a lot of time on the big day. I would roast them unstuffed. You can cook a couple of turkeys on Thanksgiving day if you want to have them for 'show' and carving at the table. I'm afraid if you try to cook them all at once those roaster ovens could cause a problem with circuit overload and space issues. Here is some roaster oven info for you:
