Recipe(tried): Uncle Bill's New England Clam Chowder

We are from Conn. and do not add, cream, milk or tomatoes but if you do want them you can add at end of cooking cycle.
Uncle Bill's Clam Chowder
1/4 pound salt pork
2 large onions chopped
1 1/2 dozen clams chopped (save juice)
4 large potatoes diced
juice from clams
3 cups water
pepper to taste
Cut salt pork in large enough pieces to remove easily and saute till brown, add onions and saute tilljust starting to brown.
Bring water to boil (no salt) add potatoes, salt pork and onions.
When potatoes are tender, remove salt pork and add clams, clam juice and pepper.
Cook for 15 minutes and serve.
This is where you can add cream, milk or tomatoes and simmer till warm.
