Recipe: Moosewood Restaurant Zucchini-Crusted Pizza (using eggs, no yeast)
Pizza/FocacciaMOOSEWOOD RESTAURANT ZUCCHINI-CRUSTED PIZZA
3 1/2 cups shredded zucchini
3 eggs, beaten
1/3 cup flour
1/2 cup grated Mozzarella cheese
1/2 cup grated Parmesan cheese
1 tbsp minced fresh basil or 1/2 tsp dried
Olive oil
Pizza sauce and desired toppings
Preheat oven to 350 degrees F.
Salt the zucchini lightly and let it sit in a sieve or colander for 15 minutes. Gently squeeze out all the excess moisture.
Combine zucchini with eggs, flour, cheeses and basil, adding salt and pepper to taste. Spread into an oiled 13x9-inch baking pan.
Bake 20-25 minutes, until the surface is dry and firm.
Brush the top with oil and broil under moderate heat for 5 minutes.
Now add your sauce and other desired toppings.
Heat the pizza in a 350 degree F oven for about 25 minutes. Serve hot.
Makes 4-6 servings
