Recipe(tried): Wacky Cake with Mock Whipped Cream Frosting (13x9-inch, no milk or eggs in the cake batter, 1960's)

WACKY CAKE

Very popular recipe from the 60's - Served at birthday parties, baby showers, picnics etc.



3 cups flour
2 cups sugar
2/3 cup unsweetened cocoa powder
2 tsp. baking soda
1 tsp. salt

Mix together the above dry ingredients into a 13x9-inch ungreased cake pan.

Make 3 wells in the flour mixture and pour in:
1 cup vegetable oil
2 tsp. white vinegar
2 tsp. vanilla

Pour over top:
2 cups cold water

Stir together until well combined.

Bake at 350 degrees F for 25 minutes.

I usually frost with Fudge Frosting from a can or I make this frosting:

MOCK WHIPPED CREAM FROSTING

5 tbsp. flour
1 cup milk
1/2 cup soft shortening
1/2 cup butter or oleo, softened
1 cup sugar
1 tsp. vanilla

Combine milk and flour in a saucepan and cook, while stirring, until thickened.

Beat together shortening, butter, sugar and vanilla until light and fluffy.

Combine flour mixture with sugar/butter mixture and beat until thick and creamy.
