Recipe(tried): Zucchini Pie

This one is excellent!!
Zucchini Pie
2c. cooked zucchini (seeds removed)
2 eggs
3/4 c. sugar
1 can evaporated milk
1 tsp. vanilla
2 tsp. cornstarch
Blend all ingredients in a blender for 10 seconds.
Sprinkle cinnamon on top before baking if desired.
Bake in an unbaked pie shell at 350 for about 45-60
min. (until a knife comes out clean) For coconut use
1/2 c. coconut. For banana use 2-2 1/2 bananas. Put
in with all ingredients & blend. (for these types
blend 15 seconds instead of 10.
