ISO: Glace Fruit

I was very happy to find the recipe from Lina Lou regarding how to make glace fruits. I just started the process tonite using sour cherries. Has anyone tried this? Also, how do I store the fruit once it is completed? I'd like to use the cherries to top shortbread cookies at Christmas.
