ISO: sauerkraut turning brown

i can my sauerkraut for 14 weeks in a crock. then i like to place it in quart jars. after about 4 to 5 months later i find my sauerkrakut turning brown can you help? l pack my jars about 1 inch from the top with sauerkraut and the rest with water.then i pressure cook the for about 15 minutes in a pressure cooker with a 5 lb rocker on it. when i take them out to cool all the lids seal real good. can you help? someone said put white vinger in the jar before canning do you know if this works. john
