I often make eggplant stuff, everyone here loves it so! but I have never thought about adding the mushrooms or olives, and altho my kids would not eat it, heck, that just means more for me and DH!

I just love Cooking Light. They have a wonderful feature where they take someone's old family favourite, and lighten it up. That is always such a treat to read, and try.

Thanks again, I will be trying this very soon!
