Recipe(tried): Potatoes Romanoff

Side Dishes - Potatoes
A friend just asked did I have a great scalloped potatoes recipe, and I don't...I just make them the way my mum used to make them, have never found anything I like better EXCEPT for this recipe for potatoes romanoff.

This goes most excellently with ham, so if you are looking for something different for a side with your ham next week, I hope you will try this! It has a nice light 'n lively flavour.

POTATOES ROMANOFF
(easily doubled, if you want more, this makes enuf for a 13 X 9 pan...Dave loves these for leftovers after school snack!)

6 medium potatoes (I use russet, it's perfectly fine if they mush a bit, some recipes even call for mashed)
1 1/2 cups cheddar cheese, grated (old...sharp) (or a bit less, to taste)
1 bunch green onions, chopped
1 cup sour cream (or a bit more, to taste)
salt and paprika

Cook potatoes whole, in salted water and let cool (I usually scrub, leave skins on, cube, and undercook slightly).

Drain cubed potatoes, let cool slightly. Put into a big bowl. Fold in rest of ingredients, leaving some cheese for sprinkling on top.

Slop 'em into your baking dish, sprinkle with paprika and bake for 35-40 minutes at 350 degrees, uncovered.

p.s. we are a spice-loving bunch around here, so I usually dust them with cayenne pepper instead of paprika.
