FREEZE CREAM IN ICE-CUBE CONTAINERS. When frozen, store the cubes in a plastic bag in the freezer. This makes it easy to sue only a tablespoon of cream in your cooking to enrich a sauce.

COW'S MILK HAS MORE VITAMIN E, vitamin B12 and folate than goat's milk. Fat, protein and carbohydrate levels are similar. Sheep's milk has about 1.5 times the amount of protein and fat as cow's milk.

BREAKFAST INCREASES THE METABOLIC RATE and helps burn up more kilojoules during the entire day. Those who skip breakfast tend to gain weight and have lower concentration levels during the late morning. An ideal breakfast has fruit, cereal with milk and wholegrain toast.

REMEMBER THE MICROWAVE OVEN for making porridge. Place raw oats and skim milk in a bowl and microwave for two minutes.

SUGARS HAVE VARIETY OF NAMES but the same kilojoule value once you eat them. Sucrose is ordinary cane sugar but other forms of sugar added to foods include glucose, dextrose (another name for glucose), lactose (milk sugar), maltose (from malted grains) and fructose (fruit sugar). Sorbitol and manitol are sugar alcohols which have as many kilojoules as sugar. Sorbitol is not suitable for diabetics.

A BANANA HAS MORE THAN TWICE as much dietary fibre as a typical green salad.

BUTTERMILK IS NO LONGER A BY-PRODUCT OF BUTTER making but is a low-fat milk product thickened slightly with a bacterial culture. It is similar to, but not as thick as yoghurt. Use it in cooking instead of milk or cream.

SKIM MILK IS AN ACQUIRED TASTE FOR SOME. If you are having trouble getting used to it, try making it half and halve with regular milk and gradually increased the proportion of skim milk.

SOFT DRINKS SWEETENED WITH ASPARTAME have been shown to be more thirst quenching than sugar-sweetened soft drinks. However, all soft drinks are acidic and potentially damaging to teeth.

A TYPICAL CHOCOLATE BAR has as many kilojoules as 3.5 salad sandwiches (7 slices of bread).
