I use evaporated milk when I want to be careful with the fat & resulting cholesterol. Evaporated milk is a staple that I always have in my home. Also, I have fat free Carnation evaporated milk. The truth is that nothing can substitute the magic flavor of heavy cream, but, once we are in a certain age, we are willing to forget (or forego) certain delicacies for the sake of LIFE.
